Easter Brunch Recipes for College Students

Easter time is almost here!

There is nothing more fun than a delicious Easter brunch. If you’re staying at school for the holidays, you’ll need some recipe ideas to share with family and friends. Luckily, we’ve got you covered! Here are 5 of the best Easter brunch recipes! 

Chocolate Chip and Graham Cracker Muffins

A little sweetness never hurt anybody! This recipe is easy and delicious and some of the ingredients can be found in our Easter Crate! First, preheat the oven to 400 degrees, and don’t forget to grease or line the muffin tin with paper liners. Combine flour, brown sugar, graham crackers like the delicious bunny-shaped ones found on our crate, cinnamon, and melted butter until moist. Then, combine flour, baking powder, salt, more graham crackers, and sugar in a large bowl. In a separate bowl, whisk together egg, milk, oil, and vanilla and stir into dry ingredients. Then, stir the chocolate chips into the prepared batter and place it in the muffin tin. Place a healthy spoonful of topping on each muffin, then bake! 

Breakfast Granola Tarts

Healthy and easy, this recipe helps make a delicious brunch! First, combine granola, coconut oil, salt, and honey (or maple syrup), in a food processor until it’s crumbly but sticking together. Then, divide the mixture into tart cases, press evenly, and refrigerate until firm. Cut the tarts out of the tins, and fill each with the yogurt of your choice, and top with your favorite nuts, berries, or seeds! Drizzle them with a bit of honey and serve! 

Hash Brown Egg Casserole

For those who like things a little more savory, this one is for you! First, arrange frozen hash brown patties in a greased dish, in a single layer, and sprinkle various shredded cheeses of your choice, ham, and scallions evenly over the top. In a large bowl, whisk together eggs, milk, salt, mustard, and garlic powder then pour it evenly over the ham mixture. Cover the dish with foil and bake for 25 minutes, then remove the foil and bake for another 20 minutes or until the edges are golden. Let it cool a bit and it’s ready to serve! 

Peeps Strawberry Shortcake Cups

This is sure to become an Easter classic! First, preheat the oven and spray a pan. Then, beat cake mix, pudding mix, milk, eggs, and butter in a large bowl then pour into the prepared baking sheet and spread evenly. Bake and cook the batter completely, then place berries in a medium bowl with sugar and lemon juice. Stir until sugar is dissolved and refrigerate for 30 minutes. Cut cooled cake into little pieces. Divide half the cake pieces into twelve half-pint jars, pressing down gently. Divide mixed berries into jars and top with remaining cake pieces. Just before serving, top each berry shortcake cup with whipped cream and peeps like the ones in your April subscription box, and enjoy! 

Caprese Avocado Toast

This has become a must at brunch! Here is an easy and delicious recipe for the ultimate snack! First, scoop out the avocado and crush it up adding some seasoning like onion powder and garlic powder, and spread it evenly throughout the toasted bread of your choice. Top the avocado spread with ripe cherry tomatoes, fresh mozzarella, thinly sliced basil, and olive oil. Drizzle on some balsamic vinegar for a sweet and tangy finish!
